Update AspireOllamaChatClientExtensions.AddChatClient to allow configuring sensitive data

AddChatClient and AddKeyedChatClient should be updated with a way to configure OpenTelemetryChatClient.EnableSensitiveData.

See microsoft/aspire#11237 as an example of doing this with different methods.
