Cleanup some of the variables and references from the recent addition of KurrentDB integration in #895 .
- Client version update to v1.1.0
- Replace connection string from
esdb to kurrentdb
- Replace environment variables from
EVENTSTORE_ to KURRENTDB_
- Replace health check to only use the
KurrentDB.Client dependency
