This tool supports Windows and macOS relatively well, because
Windows based installation is primarily through MSI packages (Microsoft's various .exe installers and VS).
macOS based installation is purely through folders.
But it would be difficult to define what is "Linux compatible", because Linux installation might come from different channels, a distribution specific package management system, folder, or Snap, etc. You don't want the uninstall tool to break your system somehow after uninstalling bits, right?
As for installations from the dotnet-install.sh script, it basically involves extracting files and directories, usually to $HOME/.dotnet. The tool could support that, couldn't it?

.NET Up (dotnetup) is going to fill the gaps, so this tool is likely to be deprecated sooner or later.
