JIT: Fix test setting general JitStress #86185

JIT\opt\OSR\largefuncletframe sets DOTNET_JitStress=2. It should set just the necessary stress modes to make sure it does not get affected by future stress modes/other stress mode changes (it was likely affected by #83771 and caused some spurious diffs due to #82164).
