Summary

Upstream PR eclipse-score/testing_tools#31
("Move test scenario libraries under score/") relocated the test scenario libraries:

• test_scenarios_cpp/ → score/test_scenarios_cpp/
• test_scenarios_rust/ → score/test_scenarios_rust/

This aligns score_test_scenarios with the score/ layout used by all other S-CORE modules.
This PR updates the two persistency BUILD files that depend on these targets to reference the
new paths.

Context

to use the new features from eclipse-score/testing_tools#31 you need to update https://github.com/eclipse-score/persistency/blob/main/MODULE.bazel#L29 to a version providing it

@umaucher There is currently no registry version of score_test_scenarios providing the score/ paths. eclipse-score/testing_tools#31 merged to eclipse-score/testing_tools at commit c16400a3 but no new registry version (e.g., v0.5.0) has been published. Used git_override (same pattern as score_tools in this file) as an interim solution — will replace with a version bump once the registry release is available.

when "touching" the MODULE.bazel file you also need to ensure to update the according *.lock file bazel mod tidy or bazel mod deps --lockfile_mode=update should do the trick
