Use Cocoa build-settings passthrough instead of xcconfig #5633

Blocked by getsentry/sentry-cocoa#9167.

scripts/build-sentry-cocoa.sh currently uses XCODE_XCCONFIG_FILE to inject SENTRY_CRASH_MANAGED_RUNTIME=1 into the Cocoa build because the upstream packaging script does not expose custom build settings.

  • Once the Cocoa issue is resolved and the updated script is available in the consumed submodule, update build-sentry-cocoa.sh to pass the build setting directly through build-xcframework-sentryobjc.sh --build-settings.
  • Preserve inherited preprocessor definitions alongside SENTRY_CRASH_MANAGED_RUNTIME=1.
  • Remove the obsolete scripts/sentry-cocoa.xcconfig workaround.
