Fresh MCP pins (weekdays)

A boring, deterministic GitHub Action (Mon–Fri, 07:00 UTC) checks npm for newer MCP package versions, rewrites pins in configs/*/mcp/, validates JSON, and commits as MOHAbdelkarim. No weekend runs. No LLM rewriting your configs.
