chore(ci): migrate workflows to Node 24 action runtimes

Summary

• migrate checkout, Node, Java, artifact, Android SDK, and pnpm actions to current Node 24-compatible majors
• normalize all workflow YAML formatting
• preserve the existing Android, iOS, macOS, Linux, Windows, and release behavior

Validation

• all six workflow files pass Prettier checks
• TypeScript check passed
• 17 tests passed with 1 existing skipped authentication test
• production server bundle passed
• Expo lint passed
• clean Expo web export passed with 25 routes

This is a focused maintenance PR and does not change application runtime behavior.
